Boil about 2-3 cups of water and keep aside.
Heat oil in a pan, add all the vegetables except peas and spring onion green.
fry the vegetables for about 30 seconds. Add in salt, red chilli powder, garam masala, sabji masala.
Cook the vegetables till they get tender.
Now add roasted vermicelli,spring onion greens , corns and peas, mix in well and fry for a minute.
Now add hot water, cook covered on medium flame for say 5 -6 minutes , keep checking ,when cooked, add soy sauce and lemon juice, and mix well gently.
Nutritious and delicious seviyan are ready to serve. Do the plating , garnish with coriander , Serve hot! !!!!
